A really juicy game sausage can be upgraded even further with tasty sides. This is wonderful food that tastes even better outdoors!
Ingredients
Game sausages (from wild deer animals like moose, deer, roe deer, etc.)
Mushrooms
Trumpet Chantarelles
Red onions
Kale
Lingonberries
Horseradish
Sour cream
Garlic
Sugar

Instructions
Place your favorite sausages on the grate, at a suitable distance to the heat. The sausages taste best when they have plenty of time to warm up over the coals, but not directly in the flames.
While the sausages are cooking on the grate, put the cast iron pan right in the coals. Brown a good portion of butter in the pan, add sliced mushrooms, and season with salt and pepper. After a while, sauté the red onion with the mushrooms. The result is a wonderful topping for the sausages.
Kale can also be used as a crunchy garnish to the sausage meal! Just before
the sausages are done, brush the kale leaves with a neutral oil, and salt and pepper. Lay the leaves for a short period on the grate, and you get a crunchy result.
Final tip
Dressing with horseradish
Add the desired amount of garlic to the sour cream, and add sugar and lemon to
taste. Mix well! Add grated horseradish. Remember that horseradish adds a lot of
taste over time, so add it just before serving. In addition to a tasty topping, a potato tortilla, lefse, or a good hot dog bread is a perfect addition. A finishing touch is some stirred (raw) lingonberries. Bon appétit!
